3tortillas (low carb)cut into squares

Directions: 

Preheat oven to 350 degrees. Spray a 12 cup muffin tin with coconut oil cooking spray. Line each muffin tin with the tortilla squares, and spray them with coconut oil spray. Sprinkle squares with a mixture of 1/4 tsp cinnamon and 1 Tbsp sweetener. Bake for 10 minutes, or until just lightly golden brown. In the meantime, prepare the apple mixture. In a medium-sized bowl, combine the diced apples with the salt, 1/2 tsp cinnamon, apple pie spice, water, and sweetener. Place the apple mixture in the microwave and cook for 3-4 minutes, or until tender. Remove apple pie mixture from microwave and let cool. Add mixture to baked tortillas. Serve with fat free Redi Whip or plan-approved ice cream.
