We had some candy corn on hand that looked so cheerfully autumnal I was inspired to find a recipe my little guy and I could make with them. I found this recipe for White Chocolate Fudge, made it a little simpler for my boy, added some candy corn, and voila! A new Cooking with Kids recipe was born!

I really like the complexity the cream cheese adds to the fudge flavor. I may even try adding cream cheese to my next batch of chocolate fudge! And the kids, of course, thought it was fabulous. It is sugar after all!

White Chocolate Candy Corn Fudge

 

Ingredients

  • 1 (8 ounce) package cream cheese, softened to room temperature
  • 4 cups confectioners’ sugar
  • 1 1/2 teaspoons vanilla extract
  • 11 oz bag white chocolate chips
  • 3/4 cup candy corn

 

Directions

1) Line an 8×8 inch baking dish with waxed paper, parchment or foil. If you have trouble getting the paper to stay, try greasing the pan first.

2) In a medium bowl, beat cream cheese, sugar, and vanilla until smooth.

3) Melt white chocolate in the microwave, according to package directions. Be sure to stir well until smooth.

4) Fold melted white chocolate and 1/2 cup candy corn into the cream cheese mixture.

5) Spread fudge in prepared baking dish.

6) Place remaining candy corn pieces on the top of the fudge. Press down gently so they won’t fall off when the fudge is cold. You can put the candy corn on randomly, like Josh did, or if you’d like a whole candy corn on top of each cut piece of fudge, lay them on in a grid pattern.

7) Chill the fudge for 1 hour, then cut into 1 inch squares. The parchment comes in handy here. I just lifted the whole block of fudge onto a cutting board using the paper as my handles. Put the fudge on a pretty plate (if you can keep the clamoring kids at bay for long enough) then serve!

  4. Fold melted white chocolate and ½ cup candy corn into cream cheese mixture.
  5. Spread fudge in prepared baking dish.
  6. Place remaining candy corn pieces on the top of the fudge.
  7. Chill for 1 hour, then cut into 1 inch squares.
