This recipe is a fun way to get kids to eat more veggies! We enjoyed them for lunch, but they could be eaten at any time of day.

Veggie Bagel Faces

  • 4 bagels
  • 1 8 oz tub Philadelphia cream cheese
  • 1 small can sliced black olives, drained
  • 1 cup kale, sliced in ruffly strips
  • 1 red pepper, sliced in strips
  • 1 cup red cabbage, sliced in thin strips
  • 1 carrot, shredded
  • 1 cup broccoli florettes, cut small
  • 1 cup grape tomatoes

1. Slice the bagels in half (little kids may need a grown-up’s help). You can toast them if you’d like, but we just ate them soft and at room temperature.

2. Spread each bagel half with cream cheese. Be sure to put it on thick enough so that the veggies will stick.
