“Under the Sea” Soup

What would your kids do if you told them they were going to eat octopus for lunch? Little strips of sliced hot dog curl up to look like tentacles, which get wrapped up in the spinach “seaweed” that is floating in an ocean of chicken broth. This Under the Sea soup is a dish that will tickle kids!

Ingredients

  • 4 cups water
  • 4 teaspoons chicken bouillon base
  • 4 hot dogs
  • 1 cup baby spinach

A note on ingredients: I don’t buy hot dogs often (they can be full of really icky things), so when I do, I am willing to spend a little extra. I look for healthier brands, like Coleman Naturals or Applegate. Also, you can substitute 4 cups of chicken stock for the water and bouillon, but for cost per serving, you can’t beat the Better Than Bouillon chicken paste added to water. The organic version is gluten and dairy free, and it has real chicken in it (you can even see the chicken in the stock.) Better Than Bouillon is a staple in our house.

Directions

Bring 4 cups water (or substitute chicken stock) to a boil.

While the water is boiling, slice each hot dog in half crosswise.

Leaving about an inch for the “body” (the cut end), slice the curved ends lengthwise into 8 “tentacles.” Our six year old did the first two lengthwise slices with a butter knife (making four sections), then I finished the job with a sharper knife to make eight.

Add 4 teaspoons bouillon to the boiling water and stir in (skip this if you are using stock.)

Add the hot dogs to the broth and simmer for 6 minutes. While you and the kids are waiting for your Under the Sea soup to cook, dance around the kitchen to “Under the Sea”!

Stir in 1 cup baby spinach and simmer for 2 more minutes. If you’d like the seaweed to look more wavy, you can slice it into strips first, but our kids loved it just as much the simple way!
