Roasted Cauliflower is Delicious!

A few years ago my chiropractor told me, “I can continue to adjust you, but until you take certain things out of your diet, it won’t make much of a difference.” The culprit? Gluten. Dairy and sugar could also cause issues too, he told me. I stopped eating gluten and within a couple of weeks I began to feel the difference. More energy and less pain. I felt great.

Life happens and foods began to sneak back. Homemade muffins, chocolate chip cookies, French bread. Ugh. A few weeks ago I realized that, even though I had weekly appointments with the chiropractor (a different one), I was always in pain and I needed to do something about it. So I decided to do that Hard Thing. Get rid of gluten.

Towards the end of March I started eating differently. I took gluten out of my diet. I limited the amount of dairy and sugar I consumed. I even policed my other carbs. And, wow! What a difference! The aches, pain, and swelling have definitely lessened. I have more energy–this is huge–and I’ve lost 10 lbs in the last three weeks. I’m loving my results.

Because of this change in my diet, I’ve taken away many of my snack options. But the last few days I’ve been craving something snacky. Something delicious, but still good for me. I searched the Build A Menu database and came up with a solution that met my criteria.

Vegetables, when roasted, are amazing! The natural sweetness comes out. All of their hidden qualities surface. Even if you’re not a vegetable lover…or a cauliflower lover, I think you’re going to be pleasantly surprised. Okay. My mouth is watering now.

Roasted cauliflower, if you haven’t tried it yet, is sweet. In fact, one of my friends told me when she let it darken in the oven, that it reminded her of roasted marshmallows. I don’t know if I would go that far, but…oh my! You really need to try this. I have six kids, ages 8 to 18, and most of them loved this side dish. A couple, of course, cocked an eyebrow at it in disdain, but eventually agreed to try it. They declared it wasn’t their favorite, but it wasn’t bad. Not too bad of a review if you’re not a cooked vegetable lover.
