Peanut butter Walnut No-Bake Cookies

Ricotta Berry Swirl
Almond/Cheese Rounds

Got a hankering for something sweet but don’t want to take the time to bake?  Here’s a simple and yummy recipe that was easy enough for my younger kids to help with and older kids could probably make all on their own.  No heating up the oven and only took about 5 minutes to put together from start to finish.  Enjoy!

Peanut butter Walnut No-Bake Cookies
  • 1 cup sugar
  • ½ cup butter
  • ¼ cup unsweetened cocoa powder
  • ½ cup milk
  • ½ tsp vanilla extract
  • pinch salt
  • ½ cup peanut butter
  • 3½ cup oatmeal
  • ½ cup walnuts chopped
  1. Add the sugar, butter, cocoa powder, milk, vanilla, and salt to a saucepan.
  2. Bring to boil and cook at rolling boil for 1 minute, stirring continuously.
  3. Stir in peanut butter until it melts into sauce.
  4. Stir in chopped walnuts.
  5. Add oats and stir until a "dough" forms.
  6. Spoon the no-bake "dough" onto wax paper and let cool 15-20 minutes, or until it sets.
