We’ve had another cold front here in Texas.  I know 22 degrees is not cold compared to where some of you are, but here in Texas, it’s cold.  Crazy thing is, it will be in the 70’s here in three days time.  But for now, my family is craving warm comfort food.  We can break out the grill in a few days.  🙂

This soup recipe really hit the spot and was so easy and quick to make and cost about $11.00 for the ingredients to feed my family of 6.  If you’re a Trim Healthy Mama, then this is an “S” meal for you.  I hope your family enjoys it as much as we did.

Nacho Beef Soup
  • 2 lbs ground beef
  • 2 tsp salt
  • ½ tsp pepper
  • 4 cups beef broth (large carton)
  • 1 14 oz can diced tomatoes with green chilies
  • 8 oz cream cheese cubed
  • 8 oz cheddar cheese shredded
  1. In a large soup pot, cook the ground beef; drain the fat and season with salt and pepper.
  2. Add the beef broth and tomatoes.
  3. Bring to a boil; cover and simmer 15 min.
  4. Cut the cream cheese into small cubes and add to the soup.
  5. Add the cheddar cheese.
  6. Heat through over medium-low heat until cheese is melted.
