Lemon Herb Couscous Salad

Ingredients
  • 2 cups couscous
  • ¼ cup olive oil
  • 1½ tsp Dijon mustard
  • 1 tsp honey
  • 2½ Tbsp lemon juice
  • ½ cucumber peeled and diced
  • 1 tomato diced
  • ½ cup fresh parsley chopped
  • ½ cup raisins
  • ¼ cup walnuts
Instructions
  1. In a large saucepan, bring about 2 quarts of water and 1 tsp of salt to a boil.
  2. Add couscous and cook until tender, 8-10 min. Drain.
  3. While the couscous cooks, in a small bowl, mix the oil, mustard, honey, lemon juice, ½ tsp salt, and ¼ tsp pepper.
  4. Add cooked and drained couscous to a large bowl, and then, pour dressing over warm couscous, mix well.
  5. Add cucumber, tomato, herbs, raisins and walnuts to the couscous and stir.
  6. Taste for seasoning and add salt and/or pepper as needed.
  7. Enjoy warm or cover then refrigerate until cool, about 1 hour.
