It’s almost the first day of autumn and I have crisp red apples and fragrant cinnamon on my mind. Yum! What is it about this combination that immediately conjures up thoughts of cooler weather, knit sweaters, and falling leaves? The smell of these scents simmering on the stove, or baking in the oven, makes me long for the fall and winter holidays, pumpkins piled on the porch, extra quilts on the beds, and a huge mug of tea.

Unfortunately, many treats this time of year—including the ones that use apples and cinnamon—are loaded with refined carbs and sugar and can tempt you to indulge. Dessert tables laden with sweets beckon from across the room. You skirt the edges, casting furtive glances towards the Dutch Apple Pie, Double Chocolate Fudge Cake, and Pumpkin Cheesecake.

But there’s good news! You won’t need to feel guilty about slipping a slice of this Apple Cake on to your plate. It’s vegetarian, gluten-free, low carb, and Clean Eating-friendly. Apples, almond flour, Truvia (or your favorite sweetener), cream cheese, and other ingredients create a moist, flavorful treat. You can serve it for breakfast as coffee cake, to guests with a dollop of your whipped topping of choice for dessert, or bring it to the next family or holiday gathering.

Gluten-Free Apple Cake
Serves 4-6

1 apple
1/2 cup butter, softened
4 oz. cream cheese, softened
1 cup Truvia (or other sugar substitute)
5 eggs, room temperature
1 tsp. vanilla
1-1/2 cups + 2 Tbsp. almond flour
1 tsp. baking powder
1-1/2 tsp. cinnamon

Peel and core the apple then chop finely. In a medium bowl, cream the butter, cream cheese and Truvia. Add the eggs, one at a time; blend in the extract. Mix the almond flour, baking powder, cinnamon and salt; add to the egg mixture a little at a time. Gently fold in the apples. Pour into a greased 8×8-inch cake pan. Bake at 350º for 35-40 minutes. The cake will be golden brown and firm to the touch when done.
