It’s April and scattered showers and major downpours are still the norm in some places around the country. Dreary weather for days at a time begins wearing on the nerves after a while. Colds and the flu attack innocent bystanders. Occasionally the sun peeks its head around the storm clouds to let us know that warm weather is just around the corner, but it’s still weeks away for some of us. 

Instead of, potentially, sinking into a melancholy state, why not celebrate the rain and cloud-filled skies? I’m convinced the English live in a perpetual state of gray (I spent three weeks during the summer one year in London and it rained almost every day), but they’ve embraced a wonderful tradition that complements this type of weather. Afternoon tea.

Gluten-free Cranberry Orange Scones

When I think about tea, I also think about English literature…and scones. Years ago I made scones on a regular basis, but I began avoiding traditional baked goods because of the gluten. But, recently, my husband developed a craving for scones—namely Cranberry Orange Scones—and so, instead of jealously watching him, I decided to make a gluten-free version for myself. A much better option than hungrily sitting across the table watching him indulge in his current comfort food of choice.

Made with almond flour, these scones are low carb, vegetarian, as well as gluten-free. They’re also fantastic. Moist, not overly sweet, slightly citrusy, and definitely addictive. The texture is also somewhat reminiscent of an oatmeal cookie—and I love oatmeal cookies. Yum!
