Caramelized Spiced Pumpkin Seeds

We’ve been having the most lovely rain of late… the kind of weather that makes you want to snuggle on the couch and read to your kids and eat warm baked treats. I have been eyeing this recipe for donut muffins since spring and decided a rainy day was the perfect time to fill the house with the smell of spicy sweetness!

This is not health food. But it sure is yummy as an occasional treat! I made a few modifications to the original recipe, more to suit our tastes than to make these donut muffins healthful. The kids were very happy. Bring on the rain!

Donut Muffins

 

Muffin Ingredients

  • 1/2 cup white sugar
  • 1/4 cup butter, melted
  • 1 teaspoon ground nutmeg
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1 cup all-purpose flour

 

Cinnamon Sugar Coating Ingredients

  • 1/4 cup butter, melted
  • 1/2 cup white sugar
  • 1 1/2 teaspoons ground cinnamon

 

Directions

1. Preheat oven to 375° F and grease a 24 hole mini-muffin tin. Mix 1/2 cup sugar, 1/4 cup melted butter, and nutmeg in a large bowl.

2. Stir in the milk.

3. Combine baking powder and flour in a small bowl

4. Add flour mixture to the sugar mixture, stirring just until combined. Don’t over stir or the muffins will become chewy!

5. Spoon batter into the greased tin, filling each spot about half full.

6. Bake muffins for 15-20 minutes. When the muffins are golden brown, remove them from the tin and place them on a cooling rack. Melt another 1/4 cup of butter in a small bowl and combine the remaining 1/2 cup of sugar and cinnamon in a separate bowl.

7. Dip each muffin in the butter…

8. …then roll in cinnamon sugar.

They are sooo good, and taste just like cinnamon donuts. The butter makes them heavenly! We enjoyed them with some pumpkin tea!
