Chunky Monkey Popcorn Cake

White Chocolate Candy Corn Fudge

Are you ready for something fun to whip up in the kitchen? Because this recipe is just that! It’s fun to make, it’s fun to eat, it’s fun to show off…it’s just plain fun! Our Cooking With kids project for the week is Chunky Monkey Popcorn Cake and it was a BIG hit at our house.

As always, we show step-by-step photos for kids following along to be able to make it alone (or with just a little supervision), so grab your ingredients and let’s get started!

The first thing you need to do is pop two bags of microwavable popcorn. (You can air pop your corn if you’d like.) Pour it all in a big bowl that you’ll be able to easily mix everything in.

Add the M&M’s and the broken pretzel pieces.

In a medium size saucepan, melt the stick of butter on medium heat. When it’s completely melted, add the marshmallows and stir until they are completely melted together with the butter. (Note: spray your spoon with cooking spray before stirring and the marshmallows won’t stick to it.)

When it’s all melted, remove from the stovetop and let it sit for a bit. You need to wait just a few minutes to let it start cooling down so it doesn’t melt the M&M’s! This is a good time to get your bundt pan ready by spraying it with cooking spray as well.

Now, go ahead and pour it all around the popcorn/candy/pretzels.

Take your big spoon and mix and turn it all until you’ve got pretty much all the popcorn coated with the marshmallows. Spoon it into the pan and press down slightly all the way around the popcorn to make sure it’s condensed a bit in the pan.

Let it sit for bit until it’s completely cooled and then you’re ready to flip it over on a plate or platter. That’s it! Super easy and looks as good as it tastes!

What candy would you like to try in your popcorn cake?

This is a fun recipe for kids to make!
  • 2 bags microwavable popcorn popped
  • 2 cups M&M's (plain)
  • 1½ cup pretzel sticks broken into small pieces
  • ½ cup butter
  • 1 bag marshmallows (miniature)
  1. Pop 2 bags of buttered microwave popcorn as directed on the package and pour into a large bowl. Remove any kernels that didn’t pop.
  2. Mix in 2 cups of M&M’s and 1½ cups broken pretzel sticks.
  3. Melt 1 stick (1/2 cup) of butter over low in a large saucepan.
  4. When melted add in a 16 oz bag of mini marshmallows (8 cups). Stir until melted and smooth. Remove from heat.
  5. Let sit a minute or two so it’s not too hot when pouring over the popcorn mix. (Try not to melt the M&M's.)
  6. Pour over your popcorn mix. Stir until all the ingredients are combined and then press into the prepared pan.
  7. Cover with foil and let cake set for at least an hour to cool.
  8. When ready to serve the cake, loosen sides of cake from pan by running a butter knife around the edges.
  9. Flip pan over onto serving platter.
  10. Store covered tightly for up to 1 day. (Best if eaten same day).
