We love that this soup uses rotisserie chicken — that means you don’t have to be cooking a whole chicken all day long. Around here, we love easy and fast, and that’s exactly what this recipe is.

Chicken & White Bean Soup
Recipe type: Entree
  • 1 rotisserie chicken
  • 2 tsp olive oil
  • 1 bunch leeks
  • ¼ tsp sage, dried
  • 1 carton chicken broth (large carton)
  • 2 cups water
  • 1 can cannelloni beans, drained
  1. Remove meat and skin of chicken, discard skin.
  2. Cut leeks into ¼ inch rounds using white and light green parts only.
  3. Heat oil in a Dutch oven over medium-high heat.
  4. Add leeks and cook, stirring often, until soft, about 3 min.
  5. Stir in sage and continue cooking until aromatic, about 30 seconds.
  6. Stir in broth and water, increase heat to high, cover and bring to a boil.
  7. Add beans and chicken and cook, uncovered, stirring occasionally, until heated through, about 3 min.
