The high temperatures of summer haven’t diminished much and turning on the oven for a lengthy amount of time still holds no appeal. At the moment, salads, sandwiches, and other fast-cooking, low heat meals are favorites, but autumn is quickly approaching and soon soups, stews, and casseroles will make their way back onto the menu. A recipe that works well for both seasons is our California Grilled Veggie Sandwich and, paired with salad and a side of fruit, it makes a fantastic, light meal.

The combination of flavors—succulent freshly grilled vegetables; savory garlic; tangy cheese; and, of course, the amazing focaccia—creates an amazing symphony of flavors that will leave you daydreaming about the next time you’ll enjoy this meal. 

Although the direction says to grill the vegetables, this open face sandwich can also be made in the oven using the broiler. If you’d like, you can also use an iron skillet on the stove top and sauté the vegetables to bring out the flavors. If you plan to use the oven to prepare your sandwich, place the focaccia bread on a baking sheet. Prepare the mayonnaise mixture and spread onto the bread followed by the feta cheese. Set aside.

Place your sliced vegetables—don’t make them too thin—in a bowl and toss them with a drizzle of olive oil and salt. Himalayan salt is my favorite. Toss to make sure they are coated evenly, then lay them out in a single layer on a baking sheet. Place your oven rack 4 to 5 inches from the broiler component and turn it on LOW. Broil the vegetables for about five minutes. Turn the broiler on HIGH and, keeping a close eye of the vegetables, broil the vegetables for 1 ½ to 2 minutes until the edges are brown. Remove from the oven, flip them over, and broil for another 1 to 2 minutes. Make sure to watch carefully. When done to your liking, remove from the oven. Depending on the amount of vegetables you use, you may need to adjust the times.

Turn the broiler on LOW and place the baking sheet with the bread on it onto the lower oven rack for a couple of minutes, watching closely. Turn the broiler on HIGH and allow the bread to begin to brown around the edges. Remove from the oven and place the vegetables on the bread. If the vegetables aren’t as hot as you wish, place the sandwich back in the oven for 30 seconds to a minute. Sprinkle more feta or Parmesan on the top, before heating if desired.
