Not being a huge kale fan, I wasn’t really sure how this recipe would turn out.  However, always on the search for a yummy AND healthy snack recipe, I wanted to try these BBQ kale chips.  They were simple to make and compared to store bought kale chips, they were a fraction of the cost.  The aroma coming from my kitchen while the kale was cooking….. on my.  It smelled so good.  I can see using the spice mix on lots of other dishes as well.  This snack is low cal, gluten free and if you are a trim healthy mama, it’s a FP.  Enjoy!

Wash and dry the kale.

Mix all the spices together in a small bowl.

Tear the kale into bite sizes pieces, discarding the heavy stems.

Spray the kale lightly with some nonstick coconut oil spray, then sprinkle with the BBQ seasoning.  Depending on how spicy you want it, either sprinkle it lightly or really coat it on there good.

Place in the oven and cook for 18-20 minutes.  You might actually need to cook the kale a little longer, depending on how much you have.  You want it nice and crispy.  Watch it carefully though so it doesn’t burn.  Remove it from the oven and enjoy.  You can store this in an airtight container.

Ingredients
  • 1 bunch kale washed and dried
  • ¼ cup paprika
  • 2 Tbsp chili powder
  • ½ tsp Stevia
  • 1 Tbsp garlic powder
  • 1 Tbsp salt
  • ½ tsp dry mustard
Instructions
  1. Mix all spices and stevia together to make the bbq seasoning.
  2. Preheat the oven 275 degrees F.
  3. Line a baking sheet with parchment paper.
  4. Remove the thick stem from the kale and discard.
  5. Tear the kale leaves into bite-size pieces.
  6. Lay the kale onto the prepared baking sheet and spray evenly with coconut oil cooking spray.
  7. Sprinkle the kale with BBQ Seasoning.
  8. Bake until crispy and browned on the edges, tossing the kale halfway through, 18-20 min. Depending on how large your bunch of kale is, it might take longer to cook.
  9. Store leftover seasoning in airtight container to save for another use.
