Barbecue is a summer favorite. It’s flavorful and messy and great for outdoor dinners on the picnic table or patio furniture. One of my kids’ favorite meals are these barbecue beef cups. They are so yummy and so easy to make, and the kids love helping me make them.

I let the kids roll out the biscuit dough and place them inside the muffin tins. They love the feeling of the dough in their hands, but they love the taste of these baked mini cups even more! The smell alone can make your mouth water, and the kids get so hungry when it’s time to add cheese to the top.

Barbecue Beef Cups

Ingredients
  • ¾ cup ground beef
  • ½ cup barbecue sauce
  • ½ cup onion, chopped
  • 1 can biscuits
  • ½ cup cheddar cheese, shredded
Instructions
  1. Preheat oven to 350.
  2. Grease the cups of a muffin pan.
  3. In a large heavy skillet over medium heat, cook beef until evenly brown.
  4. Drain excess fat.
  5. Stir in barbecue sauce and onion.
  6. Simmer for a few minutes over low heat.
  7. Flatten each biscuit, and press into cups of the prepared muffin pan.
  8. Make sure the dough comes to the top of the sides of each cup.
  9. Spoon a portion of the meat mixture into each dough cup.
  10. Bake in preheated oven for 12 minutes.
  11. Sprinkle with cheese, and bake for 3 more minutes.
