As promised, here is a fabulous and super easy treat for your dairy and/or peanut allergic friends or family. My 8 year old daughter loves to make these “all by her-self”. If you use your imagination, they are almost healthy!

Almond Butter Cups (Just like Reese’s but Peanut and Dairy Free! Amazing!!)
 
Ingredients
  • ¾ cup of almond butter (could use peanut or other nut butter)
  • 2 tablespoons honey
  • 1 teaspoon vanilla
  • ¼ cup coconut oil
  • ⅓ cup chopped nuts (optional)
  • ¾ cup non-dairy chocolate chips
Instructions
  1. Combine almond butter, honey, vanilla, coconut oil and nuts. Mix until well combined. (Coconut oil is a solid when cool so warm slightly to make it more mixable. Doesn’t need to be melted, as a liquid, just warm enough to mix easily.)
  2. Use spoon to fill mini muffin pan ⅔rds full of almond butter mixture. Works with or without muffin liners.
  3. Place in freezer.
  4. Melt chocolate over low heat being careful not to burn.
  5. Pour melted chocolate over top of chilled mixture and return to freezer.
  6. Freeze for 20 minutes and then use a knife to gently pop out of muffin tin.

Store in refrigerator or freezer in the unlikely event that there are any leftover!

Actually, we do! We LOVE the Enjoy Life Mega Chunks (dairy, nut and soy free). They are new to our area and have been a great help. We use them for fondue, in recipes, eat them straight out of the bag…. They melt very smooth and taste great. Hope you can find them!
