With autumn right around the corner, I’m anxious to begin making soups, stews, and casseroles again. A medley of ingredients simmering together is difficult to appreciate during hot weather but, once the temperatures begin to drop, become amazing comfort foods. One of these ingredients that blends well, but doesn’t get much attention, is lentils. Delicious lentils. Are they a favorite at your house?

Recently, while visiting with a neighbor across the street, the subject of cooking came up and, specifically, lentil soup. Both of our families love this dish and Betty and I discovered we both use similar ingredients. Onions, fresh garlic, green or red peppers, lentils, chicken broth, some type of tomato (diced tomatoes, tomato sauce, or tomato paste), cumin, chili powder, and ground meat (she uses turkey and I use hamburger, most of the time). Sometimes I add cilantro and other types of beans, and other times I don’t. Occasionally I leave out the meat and make it a vegetarian meal. My family doesn’t seem to mind. The ingredients that make it a favorite for them seem to be the inclusion of a few key ingredients: chili powder, cumin, and garlic. I’ve used zucchini, carrots, rice, and other random ingredients I’ve found in my refrigerator, but if those spices and herbs are included, they’ll devour it.

Lentils are a fantastic whole “fast food.” They are versatile, good for you, inexpensive, and cook quickly. All wins in my book. Their peppery flavor works well with Middle Eastern, Mexican foods, and other dishes that call for a bit of spice. Casseroles, salads, tacos, burritos, soups, stews. Delicious.
